The Best Damn Chicken Salad I’ve Ever Made

Entertaining is kind of my thing. Last month a couple of my friends decided to watch the VMA’s with me at my apartment, so I had to be sure to have something they could snack on ready and waiting.

Some people find the idea of entertaining exhausting but it doesn’t have to be. I’m all about making it easy. I decided to work with what I had in the fridge and that day it was half a rotisserie chicken from the previous week. What I ended up with is the best damn chicken salad I’ve ever made.

The best part about it is that it’s mayo free which makes it pretty much guilt free….plus it takes like 5 minutes to make!

What you’ll need:

•About three cups of chopped chicken breast (I sliced up a left over rotisserie chicken)

•1/2 cup non fat plain yogurt

•1/3 cup Dijon mustard

•Creole mix (I purchased it pre-packaged) or 5oz of chopped green/red bell peppers, green onions, parsley, celery, and yellow onion

•Grated fresh parmesan (as much as you like…yum)

•Sliced grapes

Instructions:

•Blend all ingredients to in a food processor until the chicken is shredded and the ingredients are mixed well

•Plate (bowl) it and add sliced grapes

Enjoy with your favorite crackers or between two slices of bread.
