Acai Breakfast and Snack Bowls

Breakfast is the most important meal of the day, so why not make it simple, delicious, and crazy good for you!?! Insert the Acai bowl, the prettier big cousin of the parfait.

This yummy creation originates from Brazil, synonymous with Hawaii, and most recently popularized in San Franscisco (but what isn’t… Hello gourmet toast). More importantly the base of it is the Acai berry which is a “superfood” or “super fruit”. There are an array of health benefits associated with the Acai berry but I won’t bore you with the details, that’s what Google is for. The most important fact about the berry is that it is ridiculously tasty!

So in a nutshell you’re making a thicker, prettier, more colorful version of a breakfast smoothie that comes in a bowl. Even better than the best part, one serving extremely feeling!

What you’ll need:

•Frozen Acai Berry Purée (local health food store)
•Almond milk or Apple Juice
•Frozen Bananas
•Frozen and Fresh Fruit (choose what you like, I went with frozen pineapples, strawberries, and blueberries…I also used fresh strawberries and blueberries as toppings)
•Granola

Instructions:

•Blend the Acai berry purée, (I got a 4 pack from Whole Foods for about $7.00, 1 pack equals a serving and is plenty) frozen bananas, frozen pineapples, frozen strawberries, and almond milk ( about a 1/3 a cup should be enough…you may have to add a splash more) into a thick blend

•Pour blended contents into a bowl, top with granola and fresh bananas, strawberries, and blueberries

•Enjoy!

*Note: I use Almond Milk when making the Acai bowl for breakfast and Apple Juice for snack purposes (it makes it extra sweet)….Also, play around with different fruits, nuts, and toppings
